Ingredients For the Air Fryer Enchiladas Recipe
You’ll need just a few simple ingredients to make the Air Fryer enchiladas.
- 2 teaspoons olive oil
- 1 large yellow onion, diced
- 1 tablespoon garlic, minced
- 1 pound ground turkey
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground pepper
- 2 tablespoons tomato paste
- 1 can of black beans, rinsed well and drained
- 1 teaspoon Knorr Caldo de Pollo
- 1 whole lime, juiced
- 12 yellow corn tortillas
- 1 cup shredded cheese
- 1 14oz can of green enchilada sauce
How to Make the Air Fryer Enchiladas
Once you have your ingredients ready, here’s what you’ll need to do to make the enchiladas in the Air Fryer.
Step 1: Sauté Onions
Add oil to a skillet over medium-high heat. Dice the onion and add it to the skillet and sauté for 6-8 minutes until the diced onions are translucent.
Step 2: Add Turkey and Spices
Add the ground turkey and chop it up. Add the spices and tomato paste and mix.
Step 3: Add Beans and Sauce
Add the canned black beans and Caldo de Pollo, and mix. Light coat the pan in enchilada sauce.
Step 4: Heat Tortillas
Microwave the corn tortillas for 1 minute. They will be hot but as they cool, they will be pliable enough to roll and not break.
Step 5: Fill Up the Tortillas & Roll
Add a heaping tablespoon of meat and beans to the center of the tortilla and roll. Dab a little enchilada sauce on the inside lip of the tortilla so as you roll flour tortillas over the outside lip, the sauce keeps it rolled close.
Step 6: Top with Enchilada Sauce and Cheese and Cook
Fill the pan with enchiladas, then add more of the remaining enchilada sauce to the tops of the enchiladas. Cook at 375°f for 6-8 minutes, add cheese, and then cook for 3 minutes.
Step 7: Top and Serve
Let cool then enjoy topped with sour cream, chives, and or cilantro.
Tips & Tricks to Make the Enchiladas in the Air Fryer
While making the Air Fryer enchiladas is super easy, you might want to take note of these tips and tricks too.
- I have use corn tortillas for this recipe, but you can also choose to use flour tortillas or any other gluten free tortillas if you want to.
- Don’t have green enchilada sauce that the recipe calls for? You can make do with homemade enchilada sauce too!
- I also think using red enchilada sauce can be a great idea- it can add such a nice color to the dish.
- I have used shredded cheese, but you can also choose to use sharp cheddar cheese or cream cheese instead if you want to. Just make sure you spread the cream cheese evenly on the surface of the tortillas.
- When you make Air Fryer enchiladas, remember to line Air Fryer basket with some parchment paper before you layer the tortilla rolls.
- Stick to a thin layer of the enchiladas to get that perfect crisp texture you’re looking for.
What Other Fillings Can I Use?
I have used ground turkey and black beans as the key ingredients for the filling, but you can also experiment with other toppings when it comes to making these Air Fryer enchiladas.
By swapping the turkey with shredded chicken breasts or cooked chicken, you can easily whip up some Air Fryer chicken enchiladas. To cut down the cooking time, you can just use some rotisserie chicken.
If you’re using cooked chicken breasts, just remember to season it well before you load it into the tortillas. Using seasoned chicken will ensure that your enchiladas are full of flavor.
Ground beef also makes for an excellent filling for the enchiladas. To season these, you can use a bit of taco seasoning.
You can also add Mexican rice and your other favorite Mexican toppings into the enchilada mixture.

How Do I Store the Leftovers?
