A quesadilla is a Tex-Mex dish that consists of a tortilla filled with cheese and other ingredients, then grilled or baked.

The word quesadilla is derived from the Spanish word for cheese, queso. Quesadillas are usually made with flour tortillas, but they can also be made with corn

What Goes In A Quesadilla 

The most important ingredient in a quesadilla is, of course, the cheese. Quesadillas are traditionally made with a Mexican cheese called Oaxaca. Other common ingredients include beans, chicken, and vegetables.

What Cheese Do You Use For Quesadilla ?

The best cheese to use for steak quesadillas is of course Oaxaca, but you can use any melting cheese that you like. In this Quesadillas recipe, we use Mexican Blend mozzarella and cheddar cheese.

Cooking In An Air Fryer Or On The Griddle

Cooking quesadillas in an air fryer is a great way to get that nice crispy texture without all the oil. If you don’t have an air fryer, you can also cook them on the griddle.

Ingredients Needed For this Steak Quesadilla Recipe

  • flour tortilla
  • cajun seasoning
  • butter
  • Mexican blend cheese
  • mushrooms
  • onion

How to make Steak and Cheese Quesadilla 

This directions below are really simple to do! You’ll be chowing down in no time at all!

Step 1: Season the steak

Sprinkle cajun seasoning or your favorite steak seasoning on both sides of the steak.

Step 2: Add to the air fryer basket

Place in a greased air fryer basket at 350° or the blackstone and cook for 6-8 minutes for medium rare, 8-10 for well done.

Step 3: Cook the steak

Once the steak is cooked to your liking, allow it to rest for 5 minutes. This helps to seal the juices in.

Then cut the steak into bite sized pieces.

TIP: You can cut the steak into bite size pieces and cook in the air fryer or the blackstone.

Step 4: Add the seasoning to the tortilla

On a flour tortilla spread butter over the entire tortilla in an even layer. This allows the cajun seasoning to stick to it and gives it a nice golden brown color once cooked.

Sprinkle the cajun seasoning over the butter and place side down on the Blackstone, a skillet or griddle.

On the side that doesn’t have the butter and cajun seasoning, sprinkle an equal amount of your favorite cheese or whatever you have on hand all over the quesadilla. We ALWAYS have Mexican blend, mozzarella and cheddar on hand and have made it with them all.

Step 5: Add toppings

Top the cheese with mushrooms, onions and steak (or any of the other substitutions you are using) on half of the side of the quesadilla.

The cheese only will help to melt on top of the steak and keep all of the ingredients in place.

Step 6: Fold the tortilla

Fold the tortilla in half by flipping the cheese only side over. Let the cheese melt for a minute or two (every Blackstone distributes heat differently I’ve found so know your Blackstone!).

What to serve with quesadillas 

Serve quesadillas with sour cream, guacamole, and salsa. You can have cheesesteak quesadillas on their own or you may want to make them alongside beef quesadillas or chicken quesadillas.
