There is nothing better than a warm hearty casserole on a cool day. This Crock Pot Vegetable Casserole is not only delicious and nutritious, but it is also bariatric friendly. If you are looking for something you can eat after surgery that is going to leave you satisfied, this is a perfect choice.

Are all the Ingredients in this Recipe Bariatric Friendly?

The great thing about this recipe is that it is completely bariatric friendly. Because it is so hearty, you may not be able to eat a lot at one time. The major thing you want to try to avoid when looking for bariatric friendly recipes is carbs. This means you want to steer clear of pasta, bread, and other high carb ingredients. 

Although there are carbs in vegetables, there is also a lot of fiber. Fiber tends to cancel out the carbs that are in them. Thus, you are eating a meal that has nearly no carbs. Instead, you are getting fresh vegetables packed with nutrients, vitamins, and nutrition that you need on a daily basis. 

Crock Pot Vegetable Casserole Ingredients

Crock Pot Vegetable Casserole
  • 2 cups of sliced carrots
  • ¾ cup of orange juice
  • 4 oz of sliced mushrooms
  • 4 stalks of celery, sliced
  • 1 stalk of leeks, washed and sliced
  • 2 tablespoons of chopped onions
  • ½ teaspoon of dried dill weed
  • 1 teaspoon of tarragon
  • Salt and pepper to taste
  • (slurry)
  • 2 teaspoon of cornstarch
  • ¼ cup of water

Add all ingredients except for the slurry ingredients to the slow cooker, stir and cover. Cook on low for 3-4 hours or high for 2 hours.

Add in all your ingredients.

When carrots are tender, make a slurry. To make the slurry whisk cornstarch and water in a small bowl. Pour into the slow cooker, stir, allow to cook an additional five minutes before serving.
