Healthy Cucumber Boats

When it comes to these cucumber boats, they are packed with goodness and nutrition. The base of the cucumber boats is, of course, cucumbers. Cucumbers are a great source of vitamins K and C, as well as manganese, potassium, and biotin. They’re also 95% water, making them great hydrating food.

Hummus Filling

The next ingredient in these healthy cucumber boats is hummus. Hummus is a delicious and nutritious paste made from chickpeas, tahini, garlic, and lemon juice.

Chickpeas are a great source of plant-based protein and fiber, while tahini is a good source of healthy fats. Garlic has many health benefits, including being a natural antibiotic. Finally, lemon juice is full of vitamin C.

  • 4 Mini cucumbers
  • ¼ C. Chopped grilled chicken pieces
  • 8 Cherry tomatoes cut into fourths
  • 8 Tbsp. Hummus
  • ¼ Red onion chopped finely
  • ¼ C. Crumbled feta cheese

HOW TO MAKE CUCUMBER BOATS

Cut each cucumber in half lengthwise, and scoop the seeds and flesh out from the center.

Smooth a tablespoon of hummus into each cucumber half.

Top each cucumber half with the red onion, tomatoes, grilled chicken and feta cheese.

How Long Do Cucumber Boats Last?

These cucumber boats will last in the fridge for up to two days. However, I would recommend eating them within the first day for the best taste and texture.

I wouldn’t recommend freezing these cucumber boats as the cucumbers will become watery and the texture will be off.
