Instant Pot Chicken Vegetable Rice

The best part about this simple Instant Pot Chicken Vegetable Rice meal is that it saves me from ordering takeout! When you’re looking or that flavor that is restaurant good, save your pocketbook and make this instead. And after the Instant Pot literally does the work for you, you’ll get to set back, put up your feet, and enjoy a bowl (or two!) of this simple rice dinner.

What are some other vegetables that you could add to this instant pot rice recipe?

This is just another great benefit of this simple Instant Pot recipe. You can up the veggies, if you want! Add in some diced carrots for a little kick of sweetness or even some diced tomatoes on top of the bowl once you have it served and ready to eat. I also like to top it with some fresh cilantro sometimes, too!

Ingredients For Chicken Vegetable Rice

  • 1.     1 ¾ cups chicken stock
  • 2.     1 tbsp lemon juice
  • 3.     2 tsp Herbes de Provence
  • 4.     1 tsp minced garlic
  • 5.     Salt to taste
  • 6.     Pepper to taste
  • 7.     1 large onion, diced
  • 8.     2 bell peppers, deseeded and diced
  • 9.     1 cup white basmati rice, rinsed and drained
  • 10.  3 large chicken breasts, diced
  • 11.  2 cups sweet corn kernels

How To Make Chicken And Vegetable Rice In The Instant Pot

In this order – add chicken stock, lemon juice, Herbes de Provence, salt, and pepper.

Next add the onion, bell pepper, basmati rice and chicken breasts to the Instant Pot.

Cover your Instant Pot, seal, select pressure cook / manual setting, high pressure and set the timer for 4 minutes.

When done quickly release the pressure, open the pot and add the sweetcorn on top, cover and let stand for 5 minutes. Mix well.

Serve with topping of your choice.

Instant Pot Chicken Vegetable Rice is a simple and easy to make you can serve to your whole family in dinner.

Prep Time 3 minutes
Cook Time 9 minutes
Total Time 12 minutes

Ingredients

  • 1 ¾ cups chicken stock
  • 1 tbsp lemon juice
  • 2 tsp Herbes de Provence
  • 1 tsp minced garlic
  • Salt to taste
  • Pepper to taste
  • 1 large onion, diced
  • 2 bell peppers, deseeded and diced
  • 1 cup white basmati rice, rinsed and drained

  • 2 cups sweet corn kernels

Instructions

    In this order – add chicken stock, lemon juice, Herbes de Provence, salt, and pepper. Next add the onion, bell pepper, basmati rice and chicken breasts to the Instant Pot.
