what type of apples work best for this cinnamon apple recipe?

I really like to use Gala apples for this recipe but you can use any type of apple that you want. Granny Smith apples might be a fun apple to use if you like that tart and sweet combination. Experiment with different types of apples and see which ones you prefer.
