I’m not sure what will take longer, peeling the potatoes or cooking the meal in your Instant pot! What I do know is you won’t have to worry about the potatoes boiling over on the stove top! That’s something that has happened one too many times in my home.

Potatoes are good for the body in moderation. In fact, they contain many health benefits from vitamins and minerals to antioxidants. Here are some of the benefits of potatoes.
A medium sized potato contains around 164 calories, no fat sodium or cholesterol. Some of the benefits of potatoes include:
- Vitamin C – half your daily intake can be found in one medium potato. Vitamin C helps the body develop resistance against infectious agents, metabolize proteins and protect cells from damage by free radicals.
- Potatoes are a food source of fibre. Dietary fiber keeps the digestive system healthy and helps lower cholesterol levels by binding to fatty acids and removing them from the body.
- They contain antioxidants which help fight free radicals.
- Potatoes contain postassium and Magnesium. Potassium and Magnesium are good for the body because they strengthen bones and help prevent against osteoporosis.
- The potato is a good source of vitamin B6. This vitamin helps in metabolizing carbohydrates, maintaining nerve cell function and health of skin, hair and eyes.
- Potatoes contain calcium, Iron and Zinc.
Are Potatoes Healthier Than Rice?
Are potatoes healthier than rice? They’re both starchy, carbohydrate-rich foods. But the answer to whether they are healthy depends on what you choose as a replacement for them.
If you want to lose weight or lower your risk of diabetes and heart disease, go with potatoes over rice. If you want to reduce your cholesterol level, eat healthier carbs instead of either one!
Carbs are high in calories, but they’re not all created equal. The less refined a carb is — for example, the more fiber it has and the lower its glycemic index (GI) is — the better it will be for you. Brown rice has a higher GI than boiled potatoes do.
Potatoes are a vegetable with one of the highest amounts of vitamin C. They’re also a great source of potassium and the B vitamin complex.
Too many potatoes or carbohydrates is not good for anyone, but eating a well controlled portion of potatoes as part of a balanced meal, just as jacket potato, with your favorite protein and salad or mash on your shepherds pie with a side plate of veg is a great option!
At the end of the day eating potatoes in moderation as part of a healthy diet is perfectly fine!
