WHAT ARE GREAT NORTHERN BEANS?

Cannellini beans and Great Northern beans are both white in color and are very similar in taste and cannot always be discernible.. They’re high in fiber, low in fat, and have zero cholesterol, potentially making them a perfect addition for any diet. From desserts to main dishes, beans are a essential to always have in your cupboard. With that said, yes, cannellini beans and Great Northern beans are interchangeable. Cannellini beans are different in shape and can visually distinguishable from Great Northern beans. The Chicken is also shredded and you are not eating who chicken pieces.

How to prep this white chicken chili ahead

To prep ahead of time, you can dice the onion and pepper in advance. Also precook the chicken ready for shredding and drain and rinse the cannellini beans in advance. This can make it easier to prepare your white chili chicken recipe in advance.

Ingredients for White Bean Chicken Chili

  • 1/2 medium onion diced
  • 1 green bell pepper finely diced
  • 1-pound shredded chicken, cooked
  • 4 oz green chiles (1 can) undrained
  • 6 ounces cream cheese, cubed
  • 29 oz Great Northern Beans, drained & rinsed (2 – 14.5 oz cans)
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tsp garlic powder
  • 2 tsp cumin
  • ¼ tsp cayenne pepper 
  • 2 cups low sodium chicken broth

HOW TO MAKE whITE CHICKEN CHILI IN THE INSTANT POT

Turn your instant pot onto sauté mode. Lightly spray the bottom of your pan with cooking spray. Once it becomes hot, add in your bell pepper and onion. Stir occasionally for about 3 to 5 minutes until the vegetables become translucent and cook through.

Making Your Creamy White Chicken Chili

Add to your instant pot your chicken, green chilis, beans, salt, pepper, garlic, 2 teaspoons ground cumin, quarter teaspoon cayenne pepper, Cream cheese, cup of chicken broth. Stir.

Pressure Cooking Your Chicken Chili soup Recipe

Lock the lid on your Insta pot in place to close and close the valve to seal in pressure. Set your instant pot on high pressure for 10 minutes.

Once the slow cooker has finished cooking, do a manual release by bringing the ceilings valve toward you to release the pressure.

Your cream cheese will still be in clumps. Using a whisk, break up the cream cheese as best you can, and then with a spoon, mix well while it is still hot.

Serve in your favorite soup bowl and top with your favorite garnishes! My family enjoys garnishes such as cilantro, tortilla chips, jalapeno peppers, sour cream, and grated cheese! Enjoy!
