What I Love About this Chicken Casserole

One of the reasons why this is among my favorite chicken casserole recipes is the fact that I can actually put it together in just 10 minutes.

The cooking time might be long, but with just 10 minutes to spare, I can put together a meal that is undoubtedly one of my family favorite recipes.

Plus, I can actually prep this chicken casserole dish ahead of time too, which can be great for you if you like to meal prep and love chicken casserole recipes.

Ingredients For the Million Dollar Chicken Casserole Recipe

To make this million dollar chicken casserole, here’s what you’ll need.

  • 1 ½ pounds chicken breast cut into bite sized pieces
  • 1 ⅕ pounds baby potatoes
  • 1 cup cottage cheese
  • ½ cup sour cream
  • 1 (10.75 ounce) can of cream of chicken soup 
  • ½ teaspoon garlic salt
  • ½ teaspoon onion powder
  • 2 cups sharp cheddar cheese, shredded, divided
  • 6 scallions, chopped, divided
  • 1 sleeve ritz crackers (I used garlic butter flavor), crushed
  • 6 tablespoons butter, melted

How to Make the Million Dollar Chicken Casserole

Once you have all your ingredients ready, here’s what you’ll need to do to make the million dollar chicken casserole dish.

Step 1: Add Ingredients to the Slow Cooker

Add your chicken and potatoes to the slow cooker. In a large mixing bowl combine the cottage cheese, sour cream, cream of chicken soup, garlic salt and onion powder.

Step 2: Add the Cottage Cheese Mixture

Stir the the cottage cheese mixture into the slow cooker combining with the chicken and potatoes. Cover and cook on low for 4-6 hours until the potatoes are fork tender.

Step 3: Add Cheese and Scallions

Stir in 1 cup of shredded cheese and half of the chopped scallions.

Step 4: Prepare the Crushed Crackers Mixture

In a separate medium bowl combine the crushed crackers with the melted butter and remaining shredded cheese and scallions. 

Step 5: Sprinkle Over the Top & Cook

Sprinkle the cracker mixture all over the top and place the lid back on for 15-20 minutes until the cheese is melted. Serve!

Tips & Tricks to Nail the Recipe

Putting this casserole dish together is super easy, but you might want to take note of these little tips and tricks too.

  • I’ve used sharp cheddar cheese and cottage cheese for this recipe. Depending on what you have at hand, you can experiment with other kinds of cheese too.
  • Cream cheese, ricotta cheese and mozzarella cheese are all great options.
  • I’ve used a can of cream of chicken soup to add some extra creaminess and savory flavor to this million dollar chicken casserole. You can choose to opt for cream of mushroom soup instead too.
  • For some extra garlic flavor, you can also add some garlic powder or onion powder into the chicken mixture and into the crushed Ritz crackers mixture.
  • If you’re planning to use cream cheese for this recipe, I would recommend using softened cream cheese instead of the refrigerated version.
  • Cream cheese can also be a wonderful alternative to sour cream for this recipe.
  • I’ve used uncooked chicken breasts for this recipe, but if you want, you could also use rotisserie chicken or shredded chicken that you may have leftover.
  • I also like to throw in some poultry seasoning or Italian seasoning to some extra flavor to this creamy chicken dish.
  • If you don’t have the buttery Ritz crackers that you need to create the buttery Ritz cracker crumbs, you can use bread crumbs instead.

How Do I Store the Leftover Casserole?

If you have any leftover million dollar chicken casserole, you can cover it up with some plastic wrap or aluminum foil or move it into an airtight container and refrigerate it for a day or two. This can then be reheated in the microwave or in a preheated oven.

If you want the casserole dish to last longer, you can choose to freeze it too.

How Do I Serve the Million Dollar Chicken Bake?

While this million dollar chicken casserole dish tastes absolutely delicious on its own, you can go the extra mile and team it up with some sauteed green beans or bell peppers or any other veggies of your choices.

These veggies can nicely complement the creamy sauce from the casserole dish. In fact, you can also serve it with a fresh salad if you want to.
