What are wild ramps?

The first time I heard someone say “wild ramps”, I was utterly confused! I’d never learned much about them but this recipe peaked my interest and made me hungry for this recipe.

Wild ramps are a form of wild onion that grows in rich soil and forested areas. If you’ve ever been out walking and have smelled onions, there’s a good chance that you might be smelling wild ramps!

Zuppa Toscana Instant Pot Recipe Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 pound ground pork 
  • 1 teaspoon fennel seed
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon Italian seasoning
  • 2 teaspoons salt
  • 2 garlic cloves, minced 
  • 4 cups chicken stock 
  • 1 pound radishes, peeled and halved
  • Tops from a farmer’s market bushel of Ramps, chopped into 1 inch pieces (can substitute with 2-3 cups of your choice of low carb leafy greens) 
  • 1 cup heaving whipping cream

How to make this Zuppa Toscana Instant Pot Recipe with Wild Ramps

In a mixing bowl, knead seasonings into ground pork.

Set Instant Pot to sauté and cook meat until browned. (Do not drain)

Add garlic and continue to sauté for a minute.

Add in radishes and stock and mix.

Lock the lid in place and set Instant Pot to Pressure Cook on High for 10 minutes.

Allow to naturally release for 5 minutes, then very carefully, manually release the remaining pressure.

When ready, open lid and slowly stir in the whipping cream and ramp greens. Salt and pepper to taste.
