Egg Bites Instant Pot Style are pretty amazing. In fact, when I first got my Instant Pot and my Instant Pot egg mold, I was so excited to try out new recipes.
The very first recipe I tried in my silicone egg bites mold was Ham, Cheese and Bell Pepper egg bites. They were delicious. In fact my husband enjoyed them so much. He nicknamed them mini omelettes. I guess they do taste very similar and I love how . versatile they are.
These tasty egg bites are only 1/2 point on the Weight Watchers Plan as the only pointed ingredient is the cheese!

So today I wanted to talk you through the Silicone egg mold and show you how I use mine to cook the best Instant Pot egg bites around.
You can follow my recipe perfectly but also feel free to add different ingredients as you would an omelette. If your not into meat, then maybe switch it out for mushrooms or spinach! Nom, nom, nom.
Ingredients For Ham, Pepper and Cheese Instant Pot Egg Bites
The ingredients you will need for this super easy and delicious egg bites recipe are as follows:
- 4 eggs
- 3 slices of ham
- 1/4 bell pepper – any colour
- 1/4 cup cottage cheese
- 1 tbs of grated cheese
- salt and pepper to taste
How To Cook Egg Bites In The Instant Pot
Begin by cracking the eggs into a jug.
Dice the ham and bell pepper.
Now add the cottage cheese and grated cheese to the egg, mix well.
Add the ham and bell pepper to the jug.
Add salt and pepper to taste.
(you could also add more ingredients or switch out ingredients for spinach, tomatoes and mushrooms etc)
I used pineapple cottage cheese to add extra flavour to my Instant Pot egg bites.
Pour the mixture into the silicone egg bite mold.
Place the trivet into your Instant Pot. Add 2 cups of water.
Now carefully place the silicone egg mold onto the trivet in the Instant Pot and lower.
Be sure to leave the lid off the mold. That should never go into the Instant Pot.
Cook the eggs for 6 minutes on a low pressure setting and naturally release for 5 minutes.
The eggs will come out perfect and are ready to eat hot. You can also store them in the fridge for a high protein snack later on. \
These are great when on a low carb, keto or bariatric friendly diet.
