The soup is creamy thanks to the cheese tortellini and the different kinds of cheese added in, and has that balance of tanginess from the tomato paste and the canned diced tomatoes.

It has just the right balances of flavors and textures, and is one of the easiest chicken tortellini soup recipes you’ll ever come across.

What I Love About this Recipe

The best part about this Instant Pot tortellini soup, in my opinion, is the fact that it takes little to no effort to put together, all thanks to my humble Instant Pot.

It is, quite literally, one of my favorite easy and comforting meals that I find myself making again and again for my entire family.

Ingredients For the Instant Pot Tortellini Soup Recipe

To make the Instant Pot tortellini soup, here’s all you’ll need.

  • 1 pound ground sirloin
  • 1 Sweet onion – chopped
  • 1 teaspoon of minced garlic
  • 1 teaspoon of Italian seasoning
  • 1 teaspoon of ground Oregano
  • 1/4 cup of Brown Sugar
  • 1 small can of tomato paste – 6 oz
  • 1/2 cup of Ketchup
  • 4 cups of water
  • 1 can of Diced tomatoes – 15 oz (tomato’s and juice)
  • 1/2 cup of Beef Broth
  • 1 Package of Cheese Tortellini
  • 1 1/2 cups of shredded Colby jack cheese
  • 1/2 cup grated Parmesan Cheese
  • Sliced green onion
  • Shredded Cheddar Cheese

How to Make the Instant Pot Tortellini Soup

Once you have your ingredients ready, here’s the process you’ll need to follow to make the creamy Instant Pot tortellini soup.

Step 1: Sauté the Ground Beef

Press the Sauté button on your Instant Pot, and add the ground Sirloin. Cook until no pink is visible, and Sirloin is golden brown. You can also add a dash of olive oil at this point if you want to.

Step 2: Add the Seasonings, Broth and Pasta

Drain the Fat from the Sirloin, by blotting with paper towels. Add diced onions, minced garlic, Italian seasoning, ground Oregano, brown sugar, Tomato paste, Ketchup, water, diced tomatoes, Beef Broth, and frozen tortellini. Stir well to combine ingredients.

Step 3: Put the Lid On

Place the lid on the Instant Pot, until it beeps and locks. Make sure the Pressure Valve is set to SEALING. 

Step 4: Pressure Cook the Soup

Press the MANUAL button, and set the time for 12 minutes. Let the soup cook, and when it’s finished, allow the Instant Pot to release the pressure naturally. 

Step 5: Release the Pressure

When the pressure has been release, turn the pressure valve to VENTING, from sealing, and make sure all the pressure has been released. 

Step 6: Add the Cheeses

Make sure the FLOAT VALVE is down, and remove the lid. Stir the soup, and add the shredded Colby Jack cheese, and the Parmesan Cheese.

Step 7: Top the Soup and Serve

When ready to serve; serve in soup bowls, topped with sliced green onion, cheddar cheese, and crusty bread.  Enjoy!

Tips & Tricks to Make the Instant Pot Tortellini Soup

While making this cheeseburger Instant Pot tortellini soup is super easy, you might want to note down these little tips and tricks too.

  • To bring some extra creaminess to the tortellini soup, you can add some cream cheese into it towards the end.
  • If you don’t want to use cream cheese, heavy cream can be a great option too.
  • I also like to stir in a bit of evaporated milk with some vegetable stock or chicken stock and then add it into the soup for that extra creaminess.
  • I have used beef broth for this recipe, which is an extremely flavorful broth, but if you don’t have it, you can make do with some chicken broth or vegetable broth too.
  • You can use any kind of tortellini pasta for this recipe- I’ve used a cheese tortellini to get some of that extra cheesy flavor.
  • In addition to the salt and black pepper, you can also add some red pepper flakes to season the Instant Pot tortellini soup.
  • If you don’t have the fresh minced garlic that the recipe calls for, you can make do with some garlic powder instead.

What Else Can I Add to the Soup?

In addition to everything that I’ve used for the recipe, you can also add some more ingredients of your choice to bring in some more flavor and deliciousness to the dish.

Fresh spinach can be a great addition to the soup, and if you can get your hands on it, use fresh baby spinach.

I have used ground meat for this soup recipe, but you can also choose to use ground sausage of your choice. Mild Italian sausage is what you’d usually find in a classic tortellini soup, but I would recommend using chicken sausage or turkey sausage for the best flavor.

Can I Make the Soup Without an Instant Pot?

If you don’t have an Instant Pot or a Crock Pot, you can actually make this cheeseburger soup in a regular pot too.

Just remember to choose fresh tortellini or dried tortellini instead of the frozen variety to make it cook quicker. Remember that pressure cooking is the best way to cut down the cooking time for almost any recipe, including this sausage tortellini soup.
