There is something about Tomato and basil soup which I love. In fact it was a staple when I was losing weight. Tomatoes are high in Vitamin K and calcium and rich in Vitamin C. Tomato basil soup can be very filling and can help keep the calories down as you eat healthy and live a better lifestyle.
What Goes With Tomato And Basil Soup?
Whilst tomato and basil soup is slimming and delicious, you can have it as a starter at a wedding, or family meal. Often people like to pair basil tomato soup with garlic bread or grilled cheese. If you’re looking for a healthier option, try an Italian salad such as a caprese salad or a side such as macaroni pasta or lemon basil chicken.
What Nutrition Is Found In Basil?
Basil is full of antioxidants, vitamins and phenolics. it is a rich source or vitamin K, zinc, calcium, magnesium, potassium and dietary fibre.
Known as Basil in western countries, sweet basil or holy basil in India, this delicious herb is added to many dishes both as a fresh and dried herb and is known to really enhance a dish when used.
INGREDIENTS FOR THIS TOMATO BASIL SPUP INSTANT POT RECIPE
- 3 pounds ripe vine tomatoes
- 1/4 cup olive oil
- 1 teaspoon salt
- 2 teaspoons freshly ground black pepper
- 1 medium white onion
- 3 tablespoons minced garlic
- 28 oz can fire roasted tomatoes
- 3 cups fresh basil leaves
- 1 teaspoon fresh thyme leaves
- 1 teaspoon of red pepper flakes
- 1 quart chicken stock

Easy Tomato BAsil Soup Instant Pot Recipe
Turn your Instant Pot to Sauté.
If your tomatoes are large, halve or quarter them, place them in the
Instant Pot.
Add the garlic, onions, olive oil, and salt and pepper, to the
tomatoes and toss together until coated.
Cook for 5-7 minutes, stirring often.
Turn the Instant Pot off and add all remaining ingredients.
Lock the lid, turn the steam release vent to ‘sealing’.
Set to the manual setting, for 5 minutes at High Pressure.
Once time is up let the pressure drop for an additional 10-15 minutes
before opening the lid.
Blend soup using a hand blender in the pot.
Add salt and pepper as needed.
Serve with fresh basil leaves.
