If you’re like me and always find yourself turning to soups when you’re looking for something filling, nutritious and comforting, you’ve got to try out this Instant Pot chicken parmesan soup recipe.

This comforting soup is a total hit in my household, and is sure to be in yours too.

What I Love About this Recipe

The fact that dish comes together super quick in a slow cooker or Instant Pot is what I love the most about it.

What’s more, this is actually a perfect soup that has all the food groups- protein from the chicken, healthy fats from the olive oil and the carbs from the cooked pasta.

Ingredients For the Instant Pot Chicken Parmesan Soup Recipe

To make the Instant Pot chicken Parmesan soup, here’s what you’ll need.

  • 1 package of Chicken Parm Tortellini – see link
  • 2 Tablespoons of olive oil
  • 1 sweet onion – diced
  • 1 teaspoon of minced garlic
  • 1 can of tomato paste – 6 ounce
  • 2 cans of Stewed Tomatoes – 14.5 – 16 ounces
  • 4 cups of chicken broth
  • 1 cup of Rotini pasta
  • 1 Tablespoon of Italian seasoning
  • 1 teaspoon of fresh basil
  • 1 teaspoon of ground Oregano
  • 2 heaping Tablespoons of brown sugar
  • 1/4 cup of Italian flat leaf parsley – finely chopped
  • Shredded Parmesan cheese – for topping when served

How to Make the Chicken Parmesan Soup

Here’s how you can make the easy chicken parm soup.

Step 1: Caramelize Onions

Press the Sauté button on the Instant Pot, and add the olive oil, and diced onion. Sauté the onion until it’s caramelized, or golden brown. 

Step 2: Add Pasta, Broth and Some More Ingredients

Turn off the Sauté setting.  Add the Chicken broth, tomato paste, Stewed tomatoes, Chicken Parm Tortellini, and Rotini, and stir well to blend all ingredients.

Step 3: Add the Seasonings and Spices

Add garlic, Italian seasoning, sweet basil, ground Oregano, brown sugar and Italian flat leaf parsley.  Stir all together until well blended. 

Step 4: Pressure Cook in a Slow Cooker

Place the lid on the Instant Pot until it beeps and locks. MAKE SURE the pressure valve is set to ‘SEALING’. Press the Manual setting and set the time to 7 minutes, and when the Instant Pot is done cooking, beeps and goes to ‘OFF’, do a quick release, and release the pressure.  

Step 5: Naturally Release the Pressure

When all the pressure has been released, and the float valve is down, remove the lid, and stir the soup.

Step 6: Top with Toppings and Serve.

Serve in large soup bowls, and top with shredded Parmesan cheese. Enjoy!

Tips to Make the Easy Chicken Parmesan Soup

Making this chicken Parmesan soup is super easy, but you might want to take note of these tips and tricks too.

  • If you don’t have the stewed tomatoes that I used for this recipe, you can make do with regular diced tomatoes or crushed tomatoes and some tomato paste.
  • You can also choose to use fire roasted tomatoes if you have those.
  • I have used some extra Parmesan cheese to sprinkle over each bowl of soup, but you can also consider using shredded mozzarella cheese if you want that stringy, melty texture.
  • If the consistency of the soup base seems too be too thick, you can adjust it by adding more chicken stock.
  • I have used both rotini pasta and tortellini for this recipe. If you don’t have tortellini, but still want to get that bit of chicken parm feel into the soup, you can add some chopped chicken breast or some shredded rotisserie chicken into the soup.
  • Remember that if you’re adding raw chicken into the soup, you’ll need to add it along with the spices and seasonings. Cooked chicken like rotisserie chicken can be added towards the end.

What Else Can I Add to the Soup?

In addition to everything that the recipe calls for, you can add some more add-ons to the soup.

Chopped bell pepper, particularly red pepper and green pepper are great.

You can also add some red pepper flakes in addition to the salt and pepper to season the chicken Parmesan soup.

Can I Make the Soup Gluten Free?

You can! Just choose Ditalini pasta, which has a nice gluten free version that you can cook according to package directions.

You can also choose to cook the pasta separately. Opt for medium shells, and cook the pasta until it is al dente. Remember to keep stirring occasionally to prevent the pasta from sticking to the pot.

Can I Make the Soup in a Pot?

You sure can! Just use a large pot to make the process of cooking easier. Use a heavy bottomed pot to keep the chicken Parmesan soup from sticking to the bottom.

How Can I Store the Leftover Chicken Parmesan Soup?

If you have any leftovers, allow them to cool down completely before you transfer them to a clean container with a lid.

This soup can then be stored in the refrigerator for up to 3 days. Remember to reheat it over medium heat and bring soup up to a boil before you serve it.

Serving Ideas & Suggestions

Don’t forget to top the creamy soup with some dried oregano and shredded cheese of your choice.

You can also sprinkle some chopped fresh herbs and a pinch of red pepper flakes on the top, right before you serve the soup.
