This Instant Pot Cauliflower Soup recipe is so easy to make and so good. It has crunchy Parmesan croutons, sun-dried tomato oil, spices, and creamy cauliflower, and it’s really delicious. You can have this made in very little time, and give your family a quick, healthy meal that is keto friendly. This Cauliflower Soup Instant Pot recipe is sure to become a favorite.

Cauliflower soup is a perfectly creamy, plant-based oup made with cauliflower as the main ingredient. It can be flavored with spices, herbs, or other ingredients like cheese to add more flavor. You could even use purple cauliflower for a twist on color.

Is Creamy Cauliflower Soup Keto?

Yes, this Instant Pot Cauliflower Soup is keto friendly. It is low in carbs and high in healthy fats from the Parmesan cheese and sun-dried tomato oil. This is one of my favorite Keto Instant Pot recipes. The creamy soup tastes amazing and it’s the perfect soup full of comforting flavors.

Why Make Instant Pot Cauliflower Soup?

Using a pressure cooker to make this soup is great because it cuts down on cooking time, and you can have a delicious, healthy meal ready in no time. Plus, using the Instant Pot means less dishes and easier cleanup. Not to mention the amazing soup it produces. This Cauliflower recipe is not only delicious but easy to follow as well.

INGREDIENTS FOR INSTANT POT CAULIFLOWER PARMESAN SOUP

  • 2 – 3 pounds of Cauliflower florets
  • 4 teaspoons of minced fresh garlic
  • 1 – chopped Onion
  • 6 cups of chicken broth or vegetable broth
  • 1 carton of sour cream – 4 – 6 ounces
  • 1 Tablespoon of coarse ground garlic salt
  • 1 teaspoon of seasoned pepper
  • 1 jar of Sun Dried Tomatoes
  • Crumbled bacon – for topping
  • 1 bunch of green onions – washed and finely chopped
  • 2 tubs of Shredded Parmesan cheese – 16 ounces each
  • Italian seasoning
  • Instant Pot

Meal prep time of roughly 5.5 minutes. This is a great and easy recipe.

How To Make Cauliflower Parmesan Soup In The Instant Pot

Step One: Chop The Cauliflower and Onions

Chop the florets into small pieces. Chop the sweet onion, and place the Cauliflower florets, onion, minced garlic, chicken broth, minced garlic salt, and seasoned pepper in the Instant Pot.

Step Two: Close The Instant Pot Lid

Stir well, and secure the Instant Pot lid, until it beeps and locks.

Step Three: Pressure Cook For 10 Minutes

Make sure the pressure valve is set to SEALING, press the Manual button, set the pressure to High Pressure, then set the time for 10 minutes. 

Let the Instant Pot build the pressure, cook the soup, and then naturally release the pressure. 

When the IP beeps and goes to the OFF setting, make sure the FLOAT VALVE is down, and all the pressure has been released, and then remove the lid.

Step Four: Blitz The Soup Until Smooth

Stir the cauliflower soup, and using an immersion blender or food processor, blend the soup into a smooth creamy mixture. Add the sour cream, and about 8 ounces of Parmesan cheese, and stir well.

Step Five: Serve Your Instant Pot Cauliflower Soup

When ready to serve, ladle the healthy soup into bowls, place two of the Parmesan croutons in each bowl, and drizzle a little oil from the Sun-dried Tomatoes, onto the top of the soup. 

Top with crumbled bacon, and green onions. Serve your Instant Pot Cauliflower Soup and Enjoy!

Add the sour cream, and about 8 ounces of Parmesan cheese, and stir well.

How To Make Parmesan Croutons

Step One: Line Parchment Paper

First, line a cookie sheet with Parchment paper (or use silpat) and drop Tablespoons of Parmesan cheese onto the Parchment paper, about 2 inches apart, in little bunches, and sprinkle with Italian seasoning. 

Step Two: Bake The Parmesaan Croutons

Place the cookie sheet in the oven at 350 degrees for about 10 – 15 minutes, or until the Parmesan starts to turn golden brown.

Step Three: Allow Croutons To Cool

Remove the cookie sheet from the oven, and let it cool

How Many Parmesan Croutons Per Bowl Of Cauliflower Soup?

These are the Parmesan croutons for the soup, so make as many as you like, depending on how many you’re serving. (I made 2 croutons per bowl of soup served).

Can I Use Frozen Cauliflower Florets Instead Of Fresh Cauliflower?

Yes, you can use frozen cauliflower instead of fresh. Simply add 2 minutes to the cooking time in the Instant Pot.

How To Store Cauliflower Parmesan Soup

Instant Pot Cauliflower Soup may be kept in the refrigerator in an airtight container for up to 5 days. If you want to store leftover soup then I’d recommend not adding the Parmesan croutons until you are ready to serve.

Can You Freeze Cauliflower Soup?

You can freeze cauliflower soup for up to 60 days. Make sure to let the soup cool before freezing, and place it in an airtight container.

Let the creamy cauliflower soup thaw in the refrigerator before reheating and serving. Freezing cauliflower soup may change the texture of the soup slightly, so keep that in mind.

When soup freezes and then thaws, it may have a thinner consistency. If you’re not keen on a thinner soup then try adding a little heavy cream or sour cream when reheating to help thicken it up.

How To Thicken Cauliflower Soup?

If the soup is too thin, you can add a tablespoon of cornstarch mixed with 1/4 cup of chicken broth, and stir it into the soup before serving. This will help thicken it up.

Another option is to add more Parmesan cheese, as it will also help thicken the soup. You could also use heavy cream instead of sour cream if you prefer a thicker consistency.

How To Make Cauliflower Soup Creamy

To make this healthy cauliflower soup even creamier, you can add more sour cream or heavy cream. You could also add in some cooked and mashed potatoes or white beans.

How To Make Dairy-Free Cauliflower Soup?

To make dairy-free Instant Pot cauliflower soup simply omit the Parmesan cheese and sour cream, and use vegetable broth instead of chicken broth.

You can also add some cooked white beans for extra creaminess. Top with green onions, diced avocado, or roasted pumpkin seeds for added flavor and texture.

Is Cauliflower Soup Naturally Gluten Free?

Yes, this Instant Pot Cauliflower Soup is naturally gluten free, as long as any added ingredients (such as broth or seasoning) are also gluten free.

Be sure to check labels and use gluten-free alternatives if necessary.

Can I Use Fresh Spinach Instead Of Sun-Dried Tomatoes?

Yes, you can swap out the sun-dried tomatoes for fresh spinach. Simply add the spinach during the last few minutes of cooking, until it has wilted to your desired consistency.

You can also use frozen spinach, just make sure to thaw and drain it first before adding to the soup.

Can I Use Other Types Of Cheese In This Cauliflower Soup?

You can certainly experiment with different types of cheese in this soup. Some options could be Gruyere, Asiago, or even extra sharp cheddar cheese.

Each will add its own unique flavor to the soup. If you don’t have parmesan cheese then the next best cheese would be cheddar cheese for sure.

We love the parmesan in this creamy cauliflower soup as it adds a nice nutty flavor, but feel free to experiment and try out different cheeses.

Can I Make This Cauliflower Soup Vegetarian Or Vegan?

To make this cauliflower soup vegetarian, you can use vegetable broth instead of chicken broth.

To make it vegan-friendly, omit the Parmesan cheese and use nutritional yeast as a cheese alternative.

You can also use vegan sour cream, or pureed silken tofu for a creamy texture to make it into a vegan cauliflower soup recipe.

Adding in some cooked white beans or chickpeas can add more protein to the soup and make it a fuller meal.

What If I Don’t Have An Immersion Blender?

If you don’t have an immersion blender, you can transfer small batches of the soup to a regular blender and blend until smooth before returning it to the pot.

Alternatively, you can mash some of the cauliflower with a fork or potato masher to achieve desired consistency.

Can You Use Frozen Cauliflower Rice In Soup?

Yes, frozen cauliflower rice can be used in soup. Simply thaw the cauliflower rice before adding it to the soup, and cook for a few minutes until heated through.

How Do You Fix Bland Cauliflower Soup?

If your cauliflower soup is bland, you can add more salt and pepper to taste. Other options could be adding a squeeze of lemon juice for brightness or some hot sauce or chili flakes for a kick of heat.

Chopped fresh herbs such as parsley, dried thyme or basil can also enhance the flavor of the soup.

Preheat your oven to 400 degrees Fahrenheit and spread cauliflower florets onto a baking sheet. Drizzle with olive oil, salt, and pepper and roast for 20-25 minutes until lightly brown.

Instant Pot Cauliflower Soup is an easy and quick to make recipe which you can serve to your whole family.

Ingredients

Next, rinse the Cauliflower, and break it into florets. Chop the florets into small pieces. Chop the sweet onion, and place the Cauliflower florets, onion, minced garlic, chicken broth, garlic salt, and seasoned pepper in the Instant Pot.

Stir well, and place the lid on the Instant Pot, until it beeps and locks. Make sure the pressure valve is set to SEALING, and press the Manual button, and set the time for 10 minutes. 

Let the Instant Pot build the pressure, cook the soup, and then naturally release the pressure. When the IP beeps, and goes to the OFF setting, make sure the FLOAT VALVE is down, and all the pressure has been released, and then remove the lid. 

Stir the soup, and using an immersion blender, blend the soup into a smooth creamy mixture. Add the sour cream, and about 8 ounces of Parmesan cheese, and stir well.

When ready to serve ladle the soup into bowls, place two of the Parmesan croutons in each bowl, and drizzle a little oil from the Sun dried Tomatoes, on to the top of the soup. Top with crumbled bacon, and green onions.
