  • 2 Tbsp Olive oil
  • 1 Lb Ground beef
  • 1/2 Yellow onion
  • 2 Tbsp Garlic minced
  • 4 Cups Beef broth
  • 1 Can Petite diced tomatoes
  • 1 Can Crushed tomatoes
  • 2 1/2 Tbsp Tomato paste
  • 2 Tbsp Italian seasoning 
  • 1/4 Teaspoon Salt
  • 1/4 Teaspoon Freshly Ground Black Pepper
  • 6.5 Oz Lasagna noodles –Mafalda noodles or broken lasagna noodles
  • 1 1/4 Cup Shredded mozzarella cheese
  • Shredded parmesan cheese
  • 8 oz Ricotta cheese
  • 2 Tbsp Fresh basil or Fresh parsley for garnish

How To Make Instant Pot Lasagna Soup

The great part about this soup recipe is that the Instant Pot does all the hard work for you! That’s why it’s also called lazy lasagna soup!

Step 1: Saute Onion

Set the Instant Pot to sauté, add the olive oil. Once hot, add the onion and sauté for 5 minutes. Add the minced garlic and sauté for 1 minute.

Add the ground beef, stirring occasionally with a wooden spoon until the cooked meat is browned.

Step 3: Add Broth, Tomatoes And Seasoning

Add the broth, tomatoes, ricotta mixture and seasonings.

Add the Mafalda lasagna noodles to the Instant Pot. If you don’t have mini lasagna noodles simply use largely broken lasagna noodles instead.

Step 5: Pressure Cook Instant Pot Lasagna Soup

Close the Instant Pot lid and seal the pressure valve. Pressure cook the lasagna soup on high pressure for 8 minutes. Perform a QPR, Quick Pressure Release and remove the Instant Pot lid once the steam has released.

  • • 1 (14.5 oz) can petite diced tomatoes
  • • 1 (14.5 oz) can crushed tomatoes
  • • 2 1/2 Tbsp tomato paste
  • • 2 tablespoons of Italian seasoning
  • • Salt and black pepper, to taste
  • • 8 lasagna noodles, broken into 1” pieces (6.5 oz) ***
  • • 1 1/4 cups shredded mozzarella cheese
  • • 1/2 cup finely shredded parmesan cheese
  • • 8 oz ricotta cheese
  • • 2 Tbsp chopped fresh basil for garnish

Instructions
