Best Spices For Baked Curried Chicken Thighs
There are many different spices that you can use to make this dish. However, the best spices to use are curry powder, paprika, garlic powder, and ginger.
These spices will give the chicken a nice flavor and will also help to keep the baked chicken moist. All the spices needed in this recipe can be found in your local supermarket.
Best Oil For Baking Chicken
When baking chicken, you want to use an oil that has a high smoke point so it doesn’t burn. A good option is avocado oil or olive oil.
We use olive oil in this recipe. This will also give the chicken crispy skin.

I love this cast-iron baking tray…it is of great quality and will last for years.
How do you know if the chicken is done baking?
First of all stick to the cooking time in this recipe. The best way to check if the chicken is done baking is to use a meat thermometer.
Stick it into the thickest part of the chicken and make sure that the internal temperature is at least 165 degrees Fahrenheit.
If you don’t have a thermometer, you can also check to see if the juices are running clear. Cut into the chicken with a knife and check to see if the juices are clear or still pink.

Ingredients For This Baked Curry Chicken Recipe
This recipe makes 6 servings.
2 lb. Boneless skinless chicken thighs – you can also use bone in chicken thighs, chicken drumsticks or chicken breast.
2 Tbsp. Olive oil – Olive oil is great for baked chicken as it’s a healthy fat and has a high smoke point so it won’t burn.
3 tsp. Curry powder – I like to use a Madras curry powder for this recipe.
1 tsp. Paprika – smoked paprika is a great option for this recipe.
½ tsp. Ground ginger – the ginger in this recipe gives it a fantastic flavor.
Pinch of cinnamon – a little cinnamon goes a long way in this recipe.
2 tsp. Minced garlic – garlic adds a great flavor to this dish.
Salt and pepper if desired – I don’t usually add salt as the curry powder already contains some. This recipe works well with a pinch of black pepper.
