Delicious Instant Pot Beef Bean Kale Soup

I’m so excited to share this Instant Pot Beef Bean Kale Soup recipe! This soup is healthy, easy to make and tastes delicious. It’s also one of my go-to meals when I don’t have much time on my hands or if I want a meal that will feed the whole family.

If you are looking for an easy way to get more greens in your diet, this hearty beef bean kale soup is it! The best part about this recipe? It only takes 10 minutes of prep work before putting everything into the pressure cooker which means dinner can be ready in 30 minutes or less. No need to wait long hours for a slow cooker meal anymore!

Ingredients needed for this delicious beef, bean, kale soup

Instant Pot Beef, Bean and Kale Soup Recipe: Serves 8

  • 1 pound ground lean beef
  • 2 tablespoons olive oil
  • 1 small yellow onion, diced
  • 2 tablespoons garlic, minced
  • 5 cups chicken stock
  • 16 ounces or 2 cups kale, ribs removed and chopped (fresh or frozen)
  • 5 ounces or 1/2 cup tomato paste
  • 2–10.5-ounce cans of cannellini beans, rinsed
  • 1-15 ounce can diced tomatoes 
  • 2 tablespoons Italian seasonings
  • 1 teaspoon pepper
  • 1 teaspoon salt 
  • Fresh shaved or shredded parmesan cheese

HOW TO MAKE INSTANT POT BEEF AND KALE SOUP

This beef, bean and kale soup will make cooking in the Instant Pot a breeze! Here are the step by step instructions to make it easy to fix this delicious recipe in no time!

Step 1: Saute Onion

Set Instant Pot to sauté function. Add olive oil. Once it melts and begins to sizzle, add the onions and garlic, and cook 2 minutes or until onions are translucent and garlic is fragrant, stirring occasionally.

Step 2: Add Beef

Add the beef and cook until no longer pink.

Step 3: Add Chicken Stock

Add in chicken stock, tomato paste and seasonings. Stir to combine.

Step 4: Add Tomatoes And Beans

Add in the diced tomatoes, and beans. Stir to combine. *If using fresh kale, add in here. If using frozen kale, wait until step 6.

Step 5: Pressure Cook

Set Instant pot to pressure cooklfor 5 minutes. Make sure venting is turned off and close lid. Allow pressure to release naturally for 5 minutes. Release the remainder of pressure by venting Instant Pot. 

Step 6: Stir In Kale

If using frozen kale, stir in and set to manual for 1 minute.

Step 7: Garnish and Serve

Can I Make My Own Italian Seasoning?

you can use shop bought Italian Seasoning or you can make your own version at home. Many store bought spice mixes have added sugar or preservatives. When you make your own, you know exactly what is going into the dish and there is less chance of over seasoning it.  

Here are the ingredients you would need to make a quick Italian seasoning for this recipe.

Ingredients for homemade Italian Seasoning!

  • 1 tbsp dried basil,
  • 1 tsp oregano,
  • 1/2 tsp garlic powder,
  • 1/2 tsp onion powder,
  • salt and pepper to taste.

Mix everything together in a bowl or jar until well combined. Add to the Kale Soup at the same time you add your other spices. Italian seasoning is perfect for adding to soups, casseroles and sauces.
