- 1 (4-pound) Whole Roasting Chicken
- 2 Limes, Halved
- 2 Tablespoons Olive Oil or Canola Oil
- 1 Cup Chicken Stock or Chicken Broth
- 1 Cup Salsa
- A Mexican Seasoning Bouillon
- 1 8oz Package Of Cream Cheese
- 2 Cups Monterey Jack Cheese, Shredded Cheese
- ½ Cup Diced Red Onion
- 2 tbsp. Green Onions, Chopped
- 1 Cup Salsa ( medium )
- 15 ( 6 inch ) Tortillas (Corn Tortilla is best)
- Garnish With Spicy Chili Lime Seasoning and Chopped Cilantro
How To Make Chicken Taquitos
You will need about 15 min prep time. Cook time will take about 43 minutes. Follow the steps below to make these delicious chicken taquitos!
Step 1 Prepare the Chicken
Remove giblets and excess fat from the chicken cavity. Dry the chicken thoroughly with a paper towel.
Season the chicken and chicken cavity with Tejan seasoning. Stuff the cavity with the lime halves.
Step 2 Sauté Chicken
Set your 6 or 8-qt Instant Pot to the high saute setting.
Add olive oil and chicken, breast side down, and cook until evenly golden brown for about 4-5 minutes.
Flip the chicken and saute for an additional 4 minutes, remove from the Instant Pot and set aside.
Step 3 Pressure Cook Whole Chicken
Place a metal trivet into the pot. Add the chicken stock, 1 cup of salsa, and the whole chicken on top of the trivet.
Close the Instant Pot lid. Set the Instant Pot to pressure cook on high pressure for 28 minutes.
Step 4 Natural Release Chicken
Once the pressure cooker has finished cooking, naturally release the pressure for 25 minutes. Let the chicken rest until cool.
Step 5 Remove Chicken Meat from Bone
Remove the chicken meat from the bone, and skin, and shred. Place the chicken in a large bowl.
Add your softened cream cheese, Monterey Jack cheese, onions, salsa, and 1 tbsp of Tejan seasoning. Mix to combine.
Step 6 Stuff Tortillas
Spoon 3 tbsp of the chicken mixture onto the tortilla and roll it up. Place the taquitos seam down on a parchment-covered baking pan.
Step 7 Bake Taquitos
Spray the taquitos with non-stick cooking spray. Sprinkle with Spicy Chili Lime seasoning. Bake for 15 minutes.
