Ingredients For Instant Pot Chicken Taquitos
The ingredients make about 6-8 servings. Here’s what you need!
- 2 Tbsp. Tejan seasoning
- 1 (4-pound) whole roasting chicken
- 2 Limes, halved
- 2 tablespoons canola oil
- 1 cup chicken stock
- 1 cup salsa
- A Mexican seasoning bouillon
- 1 8oz package of cream cheese
- 2 cups monterey jack cheese, shredded
- ½ cup diced red onion
- 2 tbsp. Green onions, chopped
- 1 cup Salsa ( medium )
- 15 ( 6 inch ) tortillas
- Garnish with Spicy Chili Lime seasoning

Flautas and Taquitos are slightly different. They may taste a little bit the same, but the major differences are that they use a different tortilla. They can be distinguished by the size, shape, and type of tortilla.
How To Make Instant Pot Chicken Taquitos
You will need about 15 min prep time. Cook time will take about 43 minutes. Follow the steps below to make these delicious chicken taquitos!
Step 1 Prep the Chicken
Remove giblets and excess fat from the chicken cavity.Dry chicken thoroughly with paper towels. Season chicken and chicken cavity with Tejan seasoning. Stuff the cavity with the lime halves.
Step 2 Sauté Chicken
Set 6 or 8-qt Instant Pot® to the high saute setting.Add canola oil and chicken, breast side down, and cook until evenly golden brown, about 4-5 minutes. Flip the chicken and cook for an additional 4 minutes, remove from the pot and set aside.
Step 3 Pressure Cook
Place metal trivet into the pot. Add the chicken stock, 1 cup of salsa, and the chicken on top of the trivet. Select manual to high, and set for 28 minutes.
Step 4 Natural Release
When finished cooking, naturally release pressure for 25 minutes. Let rest until cool.
Step 5 Remove Meat from Bone
Remove the meat from the bone, and skin, and shred. Place the chicken in a large bowl. Add your softened cream cheese, Monterey Jack cheese, onions, salsa, and 1 tbsp. Tejan seasoning. Mix to combine.
Step 6 Stuff Tortilla
Spoon 3 tbsp. Of the chicken mixture onto the tortilla and roll it up.
Place the taquitos seam down on a parchment covered baking pan.
Step 7 Bake Taquitos
Spray the taquitos with non-stick baking spray. Sprinkle with Spicy Chili Lime seasoning. Bake for 15 minutes.
