Step One: Hit the sauté button on your Instant Pot. Add the olive oil and begin cooking the andouille sausage until it begins to brown. Remove it, and set it to the side.

Step Two: Add more oil to the Instant Pot and add the onions and bell pepper. Cook the veggies until they become soft or about 3 minutes. Once the onion and bell pepper are soft, add the garlic.

Step Three: Once the veggies are cooked, use a wooden spoon and some water to scrape any particles from the bottom of your pot. Next, add in the kidney beans and chicken stock and stir. Next, add in the thyme, cajun seasoning, bay leaves, salt, and pepper. Stir. Pressure cook on high for 30 minutes followed by a quick release.

Step Four: Once the steam has been released, open the lid and remove the bay leaves. Then, use a potato masher and smash the beans about 6-7 times to release the flavors. Serve over the hot cooked rice and enjoy!
