Easy Instant Pot Chicken And Rice

I’m a huge fan of this Instant Pot Chicken and Rice. Not only is it tasty and delicious, but it’s a flavor that parents AND kids will both love, too. There’s just something about rice and meat that really brings it all together. And why spend a ton of your time in the kitchen when you don’t have to? This is one simple dinner recipe that you’re going to want to make over and over again.

When it comes time to start prepping for dinner, this is the one you’ll want to do use your Instant Pot for!

Can you use canned chicken in this instant pot recipe?

You can! It’s totally up to you to use whatever form of cooked chicken that you want. You can even use leftover rotisserie chicken as well.

how to saute in the instant pot?

This recipe requires you to use the saute function actually! Once you hit the sauté button, you can then add in the butter and garlic to get that golden-brown crust. The Instant Pot makes it so simple to do!

Cooking Times For Instant Pot Chicken With Rice

Instant pot chicken and rice (makes about 4 servings)

  • Prep time: 5 minutes
  • Cook time: 25 minutes
  • Total time: 30 minutes

Ingredients For Pressure Cooker Chicken And Rice

  • 1 1/2 pounds diced, cooked, chicken breasts (if using raw chicken, see step 1)
  • 4 tablespoons margarine or butter
  • 3 TBSP minced garlic
  • 4 cups chicken broth
  • 1 1/2 TBSP lemon juice
  • 1 1/2 cups white rice 
  • 1 cup Parmesan cheese 
  • 1 1/2 teaspoon salt 
  • 1/4 teaspoons black pepper

How To Cook Chicken And Rice In The Instant Pot

Turn your Instant Pot on to sauté mode. Once it become Hot, add in the garlic and margarine. Once the butter melts, add in your cooked chicken. (If using raw chicken, add to the melted butter and garlic. Stir occasionally to make sure the chicken is cooked all the way through.

Add in your lemon juice, chicken broth, and white rice. Stir well to make sure everything is incorporated.

Turn off the sauté mode by choosing cancel. Turn your Instant Pot on High Pressure for 10 minutes. It will take about 10 minutes for it to come to pressure.

After the timer is done, allow it to release naturally for 5 minutes, then manually release by turning the valve toward you with a hot pad or towel.

Open your instant pot by twisting. Add in your Parmesan cheese, salt, and pepper. Mix well. You can also add in cooked vegetables to this dish. Just make sure you add it at the end.
