Recipe Ingredients

  • Unsalted finely chopped pistachios.

  • Sour Cream Dip Ingredients (optional)

  • Juice of two lemons

How To Make Salmon Bites

1. Remove the skin of the salmon first if not skinless. 

2. Cut your salmon portions into bites and set aside. 

3. Coat the air fryer tray or base with oil or non-stick oil spray. 

4. Preheat the air fryer to 400°F. 

5. In a medium bowl, mix pistachios, breadcrumbs, and parmesan cheese and blend well. 

6. Pour honey mustard dressing into a shallow bowl and dip salmon bites in the dressing, making sure to cover them well. 

7. Then immediately coat all sides of the salmon bites in the pistachio mixture. 

8. Place the salmon in the air fryer. Keep it in a single layer only and cook for around 10 minutes, flipping once during the process. Cooking times may vary based on the thickness of portions. The internal temperature of Salmon should reach 145°F. 

9. While salmon is cooking, you have the option to prepare a yummy sour cream dip that will complement this dish well.

Salmon Cakes

We use celery, onion, and red and yellow bell peppers to enhance the flavor of these salmon cakes. Each one is covered with breadcrumbs and fried right before serving.

Recipe Ingredients 

  • 1/2 pound fresh Mowi salmon
  • Olive Oil
  • Freshly ground black pepper 
  • 4 tablespoons unsalted butter
  • Kosher salt 
  • 3/4 cup small-diced red onion (1 small onion)
  • 1 1/2 cups small-diced celery (usually 4 stalks)
  • 1/2 cup small-diced red bell pepper 
  • 1/2 cup small-diced yellow bell pepper 
  • 1 tablespoon capers, drained
  • 1/4 teaspoon Tabasco hot sauce 
  • 1/4 cup minced fresh flat-leaf parsley
  • 1/2 teaspoon Worcestershire sauce
  • 1 1/2 teaspoons Old Bay crab boil seasoning 
  • 2 extra-large eggs, lightly beaten
  • 2 teaspoons Dijon mustard
  • 1/2 cup good mayonnaise
  • 3 slices stale bread, crusts removed

How To Make Salmon Cakes

Preheat your oven to 350 °F.

Place the salmon skin-side down on a sheet pan. Brush olive oil and season with salt and pepper. Roast for 15 to 20 minutes, until just done. Remove from the oven and carefully wrap with aluminum foil. Allow to cool for 10 minutes before storing in the refrigerator.

Meanwhile, in a large saute pan over medium-low heat, combine 2 tablespoons olive oil, 2 tablespoons butter, onion, celery, red and yellow bell peppers, parsley, capers, crab boil seasoning, Worcestershire sauce, hot sauce, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Cook until the vegetables are soft, about 15 to 20 minutes. Cool down to room temperature.

Break the bread slices into pieces and process them in a food processor with a steel blade. You should have around 1 cup of bread crumbs. Toss the breadcrumbs on a sheet pan and toast in the oven for 5 minutes, until lightly toasted.

Flake the cold salmon into a big bowl. Combine the mayonnaise, breadcrumbs, mustard, and eggs. Add the veggie mixture and stir thoroughly. Cover and refrigerate for 30 minutes. Shape into ten (2 1/2 to 3-ounce) cakes.

In a large sauté pan over medium heat, combine the remaining 2 tablespoons of butter and 2 tablespoons of olive oil. In batches, cook the salmon cakes for 3 to 4 minutes on each side, until golden brown. Drain on paper towels, then keep warm in a preheated 250-degree F oven and serve hot.


You can pan fry these salmon patties or if you prefer to bake salmon, pop them in the oven to bake or tin he air fryer.

Creamy Salmon Scampi

This one-skillet salmon meal will be ready in less than 30 minutes and has traditional scampi ingredients and a creamy sauce.

Recipe Ingredients

  • Four 6-ounce skinless Mowi salmon fillets 
  • 3 tablespoons extra-virgin olive oil, plus more for brushing the skillet
  • 4 slices country bread (each 1/2 inch thick)
  • 5 cloves of garlic, 1 crushed, 4 finely chopped
  • 3 tablespoons unsalted butter
  • 1/2 cup dry white wine
  • Kosher salt 
  • Freshly ground black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1 tablespoon lemon juice
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1/2 cup heavy cream

How To Make Creamy Salmon Scampi

Brush olive oil lightly into a large nonstick pan over medium-low heat. Cook the bread pieces, stirring periodically, until toasted and brown on the bottom, approximately 3 minutes. Flip and toast the other side for 2-3 minutes. While the slices are still hot, massage one side with the smashed garlic and drizzle with 1 tablespoon olive oil. Season gently with salt and pepper and leave aside. Wipe the skillet using a paper towel.

Heat 1 tablespoon olive oil in a pan over medium-high heat. Pat the salmon dry and season both sides with salt and pepper. When the oil is heated, add the salmon, flesh side down, and cook for 2 to 3 minutes, until thoroughly browned. Flip the salmon and cook for another 2 to 3 minutes, depending on its thickness. Transfer to a platter and wipe off the skillet with a paper towel.  

Heat the skillet over medium heat. Combine the remaining 1 tablespoon olive oil and butter. When the butter has melted, add the chopped garlic and red pepper flakes, stirring until sizzling, about 30 seconds; be careful not to burn them. Bring the wine and lemon juice to a boil. 

Cook, stirring, until the mixture has been reduced by half, about 1 to 2 minutes. Stir in the cream and cook for 1 to 2 minutes, or until it thickens slightly. Return the salmon to the skillet and cook thoroughly for about 1 to 2 minutes. Stir in the parsley and serve in large shallow bowls beside the garlic bread.
