Instant Pot Chicken Fajita Soup

You’ve never had a hearty soup until you’ve had this Instant Pot Chicken Fajita Soup. It’s a great sipper combined with a hearty taste and texture as well. And if you want to have a soup that you can add in a little bit of spicy taste, this one allows you to do just that!

Trust me on this one…one bowl of this homemade soup just isn’t going to be enough! And if you’re on the weight watchers diet, you’ll love to know that this is zero points on the weight watchers plans! Guilt-free and tasty? Yes, please!

What could you add to this homemade fajita soup to make it spicy?

If you like a little bit of heat with your soup, there are so many fun tastes and flavors that you can add. Chopping up and adding in some fresh jalapeños, cayenne pepper, and even some chili pepper flakes are all a great idea!

Just make certain to do this to your own individual bowl so others don’t have to eat the heat if they don’t want to!

Instant Pot Chicken Fajita Soup

Prep: 10 Minutes

Cook: 20 Minutes

Serves: 6

Ingredients:

1 tablespoon olive oil
1 white onion; sliced into rounds
1 red bell pepper; sliced into strips
1 green bell pepper; sliced into strips
1 large chicken breast
1 package fajita seasoning
28 oz chicken broth
4 to 6 cups water – to fill line

How to make weight watchers fajita soup

Turn pot on saute mode. Add in olive oil. Add in sliced onion.

Next add your bell peppers and saute the vegetables for about three minutes.

Add chicken breast on top. Frozen can be added for the same cook time you do not need to add more time. Pour in chicken broth.

Add in water to fill line. Add entire packet of fajita seasoning. Stir well.

Turn off saute mode. Place lid on the instant pot. Turn valve to sealed position. Press manual or pressure cook button and set to 20 minutes.

After the timer has counted down and beeps release the pressure.

Serve with a side of tortillas, sour cream, and cheese of choice.
