I like to keep my meal as easy as possible so here’s another version to try: I like the potato peels so I don’t remove them but chop the potatoes, place them in the bottom of the instant pot, cover them with broth, place the trivet on top of the potatoes and then add the ribs, they can be laid – flipping the next layer so the arch of the ribs do not match but instead form a cavity. This way I cook the entire meal at once, extra flavor in the potatoes and the potatoes can be mashed while broiling the ribs.
