Where can you find the petite sirloin?

Petite sirloin is cut near the rump area, which still gives it a tasty flavor but has a tougher texture. To be specific, it comes from the tail end of the Sirloin primal.

This part is also referred to as the Bottom Sirloin Butt. Since this muscle does a lot of work, it can be very lean but lacks tenderness.

  • 2 pounds or 900g of petite sirloin steak
  • 1 cup of beef stock
  • 4 diced petite potatoes
  • ¼ cup balsamic vinegar
  • 2 tablespoons soy sauce
  • Yellow mustard (to taste)
  • 2 teaspoons of minced garlic
  • 1 onion sliced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons butter

How to Cook Instant Pot Petite Sirloin Steak Recipe

Since this meat can be tough, a broth bath in the instant pot is ideal. This extra moisture can make the meat more tender. Plus, an instant pot recipe requires very little hands-on cooking and less cleaning up afterward. So here’s an easy yet delightful recipe you can try.

In a small bowl, mix in the vinegar, soy sauce, yellow mustard, and a teaspoon of minced garlic then, set aside,

Put the sliced onions in the bottom of the pot. Scatter them to occupy most of the area.

Place the steaks on top of the onions and pour over the sauce. You may opt to add a dash of salt for more flavor.

Pour the beef stock onto the pot.

Season your potatoes with salt, pepper, and the remainder of your garlic, topped with butter. Place it on a sheet of foil, rolling up the sides to make a tray.

Place the foil pack on top of the steaks.

Put the lid on and make sure it is sealed.

Set the pressure time for 20 minutes

Once done, release the steam by opening the lid.

Remove the foil pack and toss the potatoes to incorporate the seasoning better.

Get the beef out and let it rest for a few minutes before cutting.

Plate everything together with the potatoes, onions, and another side dish of your liking.
